Toasted hemp and coconut over cucumber chunks. The jar keeps; the salad doesn’t.

Quantities are estimated, not from the source — the original card gives none. Nearly all the energy is the hemp and coconut; the cucumber is about 15 kcal of it.
Equipment
- An oven tray big enough to hold the mix in one thin layer. Heaped, it steams instead of toasting and the middle stays raw.
- A jar with a tight lid.

The clock in Session 1 is the oven’s, not yours — pull it on colour, not on time. Ovens vary more than the 5–7 minutes suggests.
Storage and reheating
- The jar — airtight, out of the light, ~2 weeks. Hemp seeds are high in fat and will eventually taste stale rather than nutty; the fridge buys longer if it’s sitting.
- Cut cucumber, undressed — 2–3 days in a container. Two serves is two lunches, so it should not have to.
- Dressed sambal does not keep. Salt and vinegar draw water out, and within about 20 minutes it is sitting in a pool. Dress at eating time, never in the container.
- Chop the coriander per serve. Chopped ahead it blackens in a day.
